- How is the scale factor calculated?
- The scale factor is the ratio of the target pan area to the original pan area. For round pans, area = π × (diameter ÷ 2)². For rectangular pans, area = width × length. A scale factor above 1 means a larger pan; below 1 means smaller.
- Do I need to adjust the baking temperature too?
- Usually not. Adjusting the ingredient quantities (via the scale factor) is the main change. Bake time may need slight adjustment — larger pans often need a few extra minutes; smaller pans may brown earlier. Check for doneness earlier than the original recipe.
